Sweet Two Bean Chicken Chili Recipe! My #Beano “Be Natural” Virtual Cook-Off Entry!

Sweet Two Bean Chicken Chili Recipe

Thanks to Beano I was asked to participate in a “Be Natural” Virtual Cook-Off and to create a recipe with all natural ingredients. In order to be a part of this event, I was given a food list and a gift card to go out and purchase items to create a delicious meal. The recipe I created would need to include at least 5 specific items off a list that had over 35 foods that are considered “gas inducing”.

Personally, I love to eat and don’t usually worry about the side effects of homemade food. I do admit, that if I am going to an event or have a lot of social interaction planned, I have avoided eating something the night before that could potentially be a problem during the next day.  Although I was aware of some of the trigger foods, I was surprised at some of the items included on the list.

I went to the store, and I picked up enough groceries to experiment with a couple of recipes. I purchased fresh and canned veggies, a fresh spice to try, along with a variety of other foods. With these ingredients, I created 2 meals that I was really excited about.  They both tasted AWESOME, and my 2 little taste testers gave them their seal of approval.

After much thought, a 2 thumbs up from my son, and a “Mmmmmm!” from my daughter, I decided to go with the Sweet Two Bean Chicken Chili. Check out this really easy recipe to create below!

Sweet Two Bean Chicken Chili Recipe-

Serves 4-6. Estimated Total Preparation Time 35 minutes.


1 Package of Sweet Apple Chicken Sausage
1 Can of Diced Tomatoes
1 Can of Pinto Beans
1 Can of Red Kidney Beans
1/2 cup of Frozen Yellow Corn
1/2 cup of Chopped Yellow Onion
3 Sweet Peppers Chopped, seeds removed (I used one red, yellow, and orange for color)
2 tsp of Extra Virgin Olive Oil
1 tsp of Chili Powder
1/4 tsp of salt

In a large pot empty both cans of drained beans and put on the stove at Medium Heat. Add the can of diced tomatoes, 1 tsp of Chili Powder, and 1/2 cup of Yellow Corn, stir with a large plastic spoon until combined. Leave this to cook, stirring occasionally.

Cuting the Chicken Sausage

Then, put 2 teaspoons of Extra Virgin Olive Oil into a large pan. With a sharp knife (I used a 8-Inch Curved Breaking Knife), split the chicken sausage links down the middle and dispose of the casing.

Put the contents into the pan on medium heat, this will look similar to ground meat. Saute this with a spatula for at least 15 minutes or when cooked completely through.

While the sausage cooks, chop the onions and peppers with a clean sharp knife. You may need to stop in between to continue the saute of the sausage to keep it from sticking.

After the sausage is cooked, add the 1/2 cup of onions and the 3 chopped peppers to the pan and saute this mix for 5 minutes. Keep this on medium heat.

Add this sausage mixture to the pot with the beans,1/4 tsp of salt, and stir. Simmer on medium low for at least 10 minutes stirring occasionally.

Serve Immediately.

My son gave this 2 thumbs up and my daughter said “Mmmmmm”!

This recipe has a really unique flavor due to the the sausage and the sweet peppers. This Chili is not hot, and has a sweetness to it.
