My kids gobbled these up, and would have eaten all of the packages in one sitting if I would have let them.  Although the baby was not quite ready for the Fruit & Veggie Crispy Chews, I let him try out the Fruity Yogurt Bites supervised, and he ate them right up.  “Us bigger kids“, decided that we liked the Banana Pumpkin Fruity Yogurt Bites and the Red Berry & Beet Fruit and Veggie Chews the best.  :)

Spinach and Apple Salad

 

If you are looking for a salad that incorporates veggies, fruit, cheese, meat, and nuts, this Spinach and Apple Salad will do just that.

I recently picked up baby spinach on sale at Publix and knew that I wanted to make some sort of salad, and figured I would use what I had on hand.

There is no perfect formula for this, so you can add as much as you like especially if you like one ingredient better than the other. You can also double the ingredients for a full bag. We happen to serve this as a side salad. 

 

Spinach and Apple Salad

Here is what I used:

1/2 a bag of prerinsed baby spinach

1 chopped apple

1/4 cup of chopped pecans

2 heaping tablespoons of feta cheese

2 pieces of cooked bacon crumbled

3 tops full of Apple Cider Vinegar

2 Tablespoons of Olive Oil.

I then combined all of these ingredients. FYI, if you have someone who does not like pecans (as in my hubby’s case) you can set those aside and top the salad with it after the fact. Serves 3 to 4.

My daughter likes feta cheese so she was fine with this salad, however my son would have preferred it without it. I thought it was delicious.

Kids Salad Bar 003

 

I had the kids home for Easter Break and on Monday I was trying to think of something fun to do.  In addition, I needed to make lunch so I asked the kids if they would like me to set up a salad bar. I told them that they could put together their own lunch and could help me pick out the items we would eat.

We were in the car so we brainstormed ideas for our salad bar. I mentioned things like tomatoes, broccoli, garbanzo beans, and cutting up a leftover boiled egg from Easter.  The kids offered up their own ideas as well like lettuce, chopped carrots, apples, and cheese.

When we got home, I told them to go play, and I would set everything out for them. I got some colorful bowls (mostly from IKEA), put in the various items, and placed them close enough so that the kids could grab the parts out.  I also put out some crackers and gave them a choice of 2 dressings. When the kids saw the bowls they could not wait to get started.

My guys were so cute assembling their dishes, I could tell they felt pretty grown up. As a bonus, they almost ate it all. I’m really happy that they had fun, and ate their veggies. I asked them if they wanted to do it again, and they said “YES” and maybe even for dinner one night.  This is definitely going to be an activity we do often in the summer time.

I actually got a special request to prepare this dish for Easter and I get this request pretty often for family get togethers.  It is a really simple recipe to prepare and looks wonderful. Plus, the kids will eat this, and since it has Veggies, Cheese, and Olive Oil in it, I’m glad they like something that is healthy! What is also awesome is, many of the ingredients were either Buy One Get One Free or on sale at Publix. 
 
 
 
So, here is what you need for Colorful Pasta Salad Made With Vegetables and Salad Supreme:
 
1 lb of Rotelle Pasta Cooked
1 tbsp of Extra Virgin Olive Oil
1 cup of Italian Dressing
1/2 cup of Olives chopped into 3rds
1/2 cup of Cherry or Grape Tomatoes chopped into 4ths
1 Large cucumber chopped into 4ths
3 Mozzarella Cheese Sticks Reduced Fat chopped into small pieces
3 tbsp of McCormick Salad Supreme




So to start, I usually boil the pasta in advance and put it in the fridge so it is chilled.  I happen to do this first thing when I got up, and then used it about 3 hours later.
 


Once I am ready to use the pasta, I add the tbsp of Olive Oil  and stir to separate the pasta. After that I add the 1 cup of Italian Dressing and stir.
 
 
 
Then, I chopped up the vegetables and cheese.
 
Adding the cucumbers.
 
 I add each to the pasta one at a time and stir.
 
 
Can’t see the cheese but added it, and adding the Olives.
 
Adding the Tomatoes.
 
This will be what it looks like right before you add the 3 tbsps of McCormick Salad Supreme and mix. Then, Refrigerate after.
