A colorful Chicken Salad.
I had a group of moms come over for a Mommy Play-date, and I wanted to make a chicken salad for the event. I has previously tried chicken salad with grapes in it, and since I had apples and dried cranberries, I thought they might taste good in a chicken salad as well.
So here is what I needed for the Cranberry and Apple Chicken Salad Recipe:
1 can of 10 oz Chuck white Chicken Breast
1 Apple Chopped
1/2 Cup of Dried Cranberries
1 Stalk of Celery chopped
2 tbsp of Mayonnaise
I chopped up the apples first into very small pieces, and then the celery. I then drained the water from the chicken and I added all of the rest of the ingredients together, mixed, and placed the finished salad on a serving dish.
This took me less than 10 minutes to put this together, and I actually made this after my guests arrived. It looks really pretty and can be served on slider buns, mini hoagies, or croissants.
Plus if you don’t want to use canned chicken, you can boil a chicken breast, or use leftover chicken. I haven’t tried this yet, but I think this would also be great for left over Turkey.
