I was looking for something quick to throw together for lunch the other day and I happen to have a ton of Triscuits that I bought on sale, a cucumber, whipped cream cheese, and dried Dill. I thought, I bet these would taste good together!
Actually, I had, had something similar on baguettes before, and I am a firm believer in using what you have, so I used my Rosemary/Olive Oil flavored Triscuits as a substitute.
As a lunch dish, this serves around 4, as a snack or Hors d’oeuvres 5-10 maybe?

So, here is what you need to make the Cucumber Triscuit Appetizer Recipe:
A Box of Triscuits
A medium to large Cucumber
Whipped Cream Cheese
Dried Dill
How I did it:
Now I happen to have had a large cucumber on hand that I cut with a fancy edged tool, however it overlapped the Triscuit (but it was just us, so I wasn’t too concerned about appearance). I think a medium sized cucumber sliced probably would have looked better if I was serving this to a dinner party or a group of moms. Chopping the large cucumber in half and then slicing would have made more servings as well.
So I cut up the cucumbers into thin slices, put cream cheese on Triscuits, added the cucumber on top , and finally sprinkled a little dried dill on top of that.

It was delicious and the kids actually ate it. I thought it tasted great as well, and it is simple and easy to throw together! I will definitely be making this again, and might even use it for an upcoming play-date or family get together.
